Fresh Market had mangoes on sale at 10 for $10, which is about as cheap as you’ll get in Florida (outside of bulk purchases at warehouse clubs, where the quality of produce is not always consistent) but I’m not likely to eat so many mangoes before they spoil. Fortunately, my favorite way to enjoy mango is in smoothies, so it was freezer time again!
How to Freeze Mango at Home
What you need:
- vegetable/fruit peeler
- cutting boards & knife
- cookie sheet w/ lip (to prevent fruit from rolling off)
- clean space in your freezer where the sheet can lay flat for a few hours
- plastic bags for storage
Step 2: Arrange mango chunks in a single layer on cookie sheet. Prevent touching as the mango will tend to stick together. Unlike strawberries, contact between chunks of mango during the freezing process makes them very difficult to separate.
Step 3: Place sheet on flat space in freezer. Depending on how large or small you cut your mango chunks, freezing time will vary. I cut mine about the size of small strawberries and they were ready within three hours.
Step 4: After freezing is complete, remove cookie sheet from freezer and place mango chunks in plastic bags for storage. Again, I recommend labeling your bags with the date and contents, though my wife thinks I’m silly for writing “mango” when you can clearly tell what’s inside. Go figure.
Much like strawberries, mango was super easy to freeze, and very cost-effective as well. I cut and froze five of the ten mango, which yielded two full quart-size freezer bags. The bags weigh in at 19-20 oz. each, and at 2.5 mango per bag they cost $2.50. Compare this to at least $3.00 for a 16 oz. bag in the grocery store (when on sale) and my budget is happy.
I have used the mango in a few different smoothies so far and I’m quite pleased with the results. They blend well and the flavor is still fresh almost a month later. I plan to freeze two batches next time they go on sale.
Tune in Friday for a special Vita-mix recipe using today’s frozen mango!
Update: I now use a OXO Good Grips Mango Splitterfor easier cutting. You can read more about my experience and technique here, but after some time with the gadget I definitely recommend it for preparing mango, whether it's for freezing or just to enjoy fresh.
